I’m doing something this week that I never really dreamed I would do before. I am completely putting myself and my insecurities out there, and there’s no turning back now!
And no, I’m not speaking in front of hundreds of people – that would be the ultimate leap of faith since I am so not a fan of public speaking. But in my opinion, this is a close second as it feels rather unnatural for me.
I’m creating a series of short videos for an educational course I’m putting together for a corporate client of mine. And here’s the kicker – we are filming them all over the course of four days. I’m a mix of excited, anxious, and just ready to get these bad boys over with as I write this post. I think the anticipation is what’s most killer and I know that once I get going, it will come easier and I might just enjoy it. Imagine that!
So while I continue to work on the content and my video presence, I’m making sure that I’m equipped with foods that are going to boost my energy levels, keep my skin clear and bright and help combat this natural stress that my body is feeling right now.
The Ultimate Superfood Detox Mason Jar Salad
And so, I introduce to you the ultimate superfood mason jar salad with a delicious blueberry hemp seed dressing! This baby is packed with all of the good stuff that will help prepare your body for an upcoming event or recover from an overindulgent night (or two). Or really, it’s so delicious, you should indulge in this salad any time you’re craving a super healthy and clean, yet delicious, meal.
You know those foods that look so fresh and vibrant that you know it’s going to make your body feel good? This is one of those foods. This superfood detox mason jar salad is colorful, vibrant and full of nutrients that will make you glow from the inside out!
I think the ingredients speak for themselves, but let’s break down the health benefits of this salad just in case you needed a little more persuading.
The vibrant and fresh veggies are full of nutrients that will help detox the body, restore energy, boost the immune system and aid in healthful, glowing skin. The fiber helps to promote a healthy digestive system and keeps things movin’ along (if you know what I mean!).
The goji berries and blueberries are packed with antioxidants which helps protect the body from the effects of stress and free radicals found in our environment.
The sunflower seeds, quinoa and hemp seeds (in the dressing) contain protein (along with many other nutrients) that help repair and restore your body and leave you feeling satisfied until your next meal.
The best part about this salad (okay, there’s a lot of great parts) is that it can be made ahead of time, so you can make one or four of these salads to have on hand throughout the week!
This salad would also be delicious with some avocado and/or grilled chicken added on top at the last minute. Just sayin’.

Description
Give your body a healthy reset with this superfood detox mason jar salad! It’s packed with all the good stuff to give your body the rest and nourishment it needs to get back on the healthy track.
Ingredients
- 1 bunch kale, rib removed and chopped
- 1 1/3 cup cooked quinoa
- 1 cup thinly sliced radishes
- 1 1/2 cup broccoli florets, cut into small pieces
- 1 1/2 cups shredded carrots
- 1/2 cup goji berries (could sub dried cranberries)
- 1/2 cup sunflower seeds
Blueberry Hemp Seed Dressing:
- 1/3 cup apple cider vinegar
- 1/4 cup olive oil
- 1 lemon, juiced
- 2 tablespoons hemp seeds
- 2 tablespoon parsley
- 1/2 cup blueberries
- 1/2 teaspoon salt
Instructions
- In a food processor or blender, combine all of the dressing ingredients and blend on HIGH until smooth.
- In each mason jar, layer the ingredients from bottom to top: 3-4 Tablespoons dressing, 1/3 cup broccoli florets, 1/4 cup sliced radishes, 1/3 cup shredded carrots, 2 Tablespoons goji berries, 1/3 cup cooked quinoa, 2 Tablespoons sunflower seeds and fill the rest with kale, making sure to pack the leaves tightly. Screw on the lid and store in the refrigerator for up to four days!
- When ready to serve, shake the mason jar out onto a plate so that all of the salad ingredients can become coated with the dressing. Enjoy!

I cannot stand public speaking it seriously scares the crap out of me…LIKE BIG TIME! I am finding though with video, that I just keep trying new things, being silly, doing it more often. The more you do it and accept that sometimes you are going to be awkward and weird and other times you rock it you are good to go. Just be open! Now I need to take my own advice…LOL!
