
Can you tell I’ve been on a smoothie kick lately? Aside from a cup (or two) of coffee, my morning smoothie routine really helps get me going, leaving me feeling refreshed and ready to get the day started. And knowing that all of the ingredients are already waiting for me in their own little Ziploc bags in the freezer makes it that much easier!
With summer just around the corner, this drink will have you wishing you had sand in between your toes while basking in the sun’s rays (with sunscreen on, of course).

Lime in the Coconut Smoothie

Ingredients
- 1/2 mango, roughly chopped
- 1/4 c. fresh mint leaves (small handful)
- 1 frozen banana
- Handful of spinach
- *zest or the juice of 1 lime
- 1/2 c. coconut Greek yogurt (one individual container)
- 1/2 c. coconut milk (or milk of choice)
Instructions
- Blend mint leaves, spinach, lime juice, and coconut milk until well incorporated
- Add the rest of the ingredients and blend until smooth
- Enjoy!
*I personally prefer fresh lime juice, but you can substitute lime zest for an extra zing of flavor and convenience!
Prepare ahead of time: Place first four (or five if using lime zest) ingredients in a Ziploc bag and freeze. If using lime juice – you can juice the limes ahead of time and store in the refrigerator until ready for use.
