Recipe: Tequila Lime Shrimp Tostadas with Mango Avocado Salsa

My husband and I love Mexican food; so naturally, I end up making a Mexican-inspired dish for dinner at least once a week. I usually enjoy cooking this cuisine at home because it is quick, easy, and healthy when you know exactly what ingredients are going into the dish!

I was recently browsing through a Rachel Ray magazine and the beef and mango tostada recipe immediately caught my eye. I have never ordered tostadas at a Mexican restaurant, so I figured what better way to try them than by making them myself? Instead of following the recipe exactly (okay, I really didn’t follow the recipe at all), I decided to put my own twist on it, and I must say – the outcome was delish. I hope you enjoy this fresh, summery dish as much as we do!

Tequila Lime Shrimp Tostadas with Mango Avocado Salsa

Ingredients

Scale
  • For the shrimp:
  • 1/2 cup tequila
  • 2 limes, juiced
  • 2 tablespoons honey
  • 1 teaspoon cumin
  • pinch of salt
  • 2 lbs. peeled, deveined raw shrimp
  • For the mango avocado salsa:
  • 1 mango, diced
  • 2 small avocados, diced
  • 1 poblano pepper, diced
  • 1/2 red onion, diced
  • 1 lime, juiced
  • 8 corn tortillas

Instructions

  1. Whisk together the first five ingredients in a medium bowl until combined and pour into ziploc bag.
  2. Add the shrimp and set aside to let the flavors mingle for up to 30 minutes.
  3. In the meantime, make the mango avocado salsa by combining all of the salsa ingredients in a small bowl and set aside.
  4. In skillet, heat coconut oil (or olive oil) over medium-high heat.
  5. Add the shrimp and sauté until opaque, about 4 minutes.
  6. Meanwhile, in a large, dry skillet, toast the tortillas over high heat until golden and crispy.
  7. To assemble, layer individual tortillas with shrimp, mango avocado salsa, and sprinkle with cilantro. Serve with slices of lime for an extra zing!

  1. Love shrimp taco anything! And that avocado mango salsa looks amazing. Pretty sure my first shrimp taco encounter was the Bang Bang Shrimp Tacos at Bonefish Grill…. definitely NOT as fresh and healthy as this though! 😉 Pinning for sure!
