These overnight oats are inspired by my favorite ice cream blend and will be sure to give you a little jolt in the morning, thanks to the cold brew coffee! Even though these mud pie mojo overnight oats might sound indulgent, they’re actually quite healthy with ingredients such as cold brew, peanut butter, roasted almonds and cacao nibs. The other day a friend and I were talking about ice cream. We both love to treat ourselves to froyo from time to time, so we can get talking about ice cream more times than you might think!
It was during this conversation that I learned my friend had never been to Coldstone Creamery, a popular ice cream place where we both grew up. I used to always go there with as a kid and would order the same thing every time – a mud pie mojo in a waffle bowl.
So what exactly is a mud pie mojo?
It’s a blend of coffee ice cream, oreos, peanut butter, roasted almonds and fudge. It’s incredibly rich, but the perfect blend of all my favorite flavors in one bowl. I’m pretty sure if I ordered one today, I would only be able to finish off a few bites!
Since I’m probably not going to hit up the nearest Coldstone Creamery any time soon, I thought I would combine these flavors into a much healthier treat that could satisfy my cravings. And so, I introduce to you, Mud Pie Mojo Overnight Oats!
Overnight oats are a fantastic breakfast on-the-go because they can be made ahead of time and stored in your refrigerator for up to four days.
For me, finding time to make breakfast usually doesn’t happen, so having something already prepared helps set me up for a healthy and energized day.
In these Mud Pie Mojo Overnight Oats, I’m using a new-to-me ingredient – cold brew coffee! I know, I’m so behind the trends. The coffee combined with the peanut butter, roasted almonds and cacao nibs remind me of my favorite ice cream indulgence, without being well, too indulgent.
In my book, errrr kitchen, the coffee + nut butter + chocolate combo always wins and I’m kicking it up a notch for breakfast with these mud pie mojo overnight oats. It’s the perfect morning treat to give you a little pep in your step and start your morning the healthy way!

Mud Pie Mojo Overnight Oats

Ingredients
- 1 banana, mashed
- 2 Tablespoons peanut butter
- 1 cup almond milk
- 1/2 cup cold brew coffee
- 2/3 cup rolled oats
- 1/4 cup roasted almonds, chopped
- 1/4 cup cacao nibs
- 3 Tablespoons chia seeds
- 2 Tablespoons maple syrup
Instructions
- Mash the banana and the peanut butter together. Divide the mash between two mason jars evenly.
- Add the rest of the ingredients, dividing evenly between the two jars.
- Screw on the lid and shake vigorously until all of the ingredients are mixed well.
- Store in the refrigerator overnight or for at least a few hours to let thicken up. Enjoy!
