I love my green smoothies and have one almost every day. Whether I make a smoothie in the morning (after a cup or two of coffee) or reach for one of these delicious drinks in the afternoon when I need a little pick-me-up, they always give me the boost of energy and nutritious goodness I need to get going. With so many flavor possibilities, the combination of ingredients that could be blended into a green smoothie are endless.

During the summer, I am always dreaming of an island getaway and this tropical green smoothie recipe is the closest thing that will get me to the sand in between my toes while basking in the sun’s rays (with sunscreen on, of course).

The protein found in Greek yogurt will help keep you fuller longer and is a key ingredient when making smoothies as part of a meal. The creaminess of the coconut milk and the freshness of the mint, finished with a zing from the lime makes this smoothie recipe a favorite in my household. Lime in the Coconut Smoothie


Ingredients

Scale
  • 1/2 mango, roughly chopped
  • 1/4 c. fresh mint leaves (small handful)
  • 1 frozen banana
  • Handful of spinach
  • *zest or the juice of 1 lime
  • 1/2 c. coconut Greek yogurt (one individual container)
  • 1/2 c. coconut milk (or milk of choice)

Instructions

  1. Blend mint leaves, spinach, lime juice, and coconut milk until well incorporated
  2. Add the rest of the ingredients and blend until smooth
  3. Enjoy!

*I personally prefer fresh lime juice, but you can substitute lime zest for an extra zing of flavor and convenience!

To save time, prepare the smoothie ingredients ahead of time by placing the first four (or five if using lime zest) ingredients in a Ziploc bag and freeze. If using lime juice – you can juice the limes ahead of time and store in the refrigerator until ready for use. Then, when you’re ready to whip up this delicious and refreshing smoothie, all you have to do is dump the ingredients into the blender and go!

  1. I think this looks delish. I am going to try this when my daughter goes back to school. My diet goals are out the window this summer because I can’t seem to exercise or eat right. 🙁 Oh well, I am enjoying the icecream for now.

    1. Mary – The summer is such a hard time to stay consistent, especially when your schedule is all out of whack. Ice cream isn’t so bad though ;-). You can always pin it for later!

  2. I Love smoothies… I never stick to a recipe, just throw in what I have around until it is a good consistency…. I however love the idea of this because it uses mint (which I have loads of to use up) I can’t use it all on Mojitos… or can I?!

    1. I usually just throw what I have in the blender, but sometimes it’s nice to switch it up with new flavors! Haha! I mean, you could easily make this an adult beverage. Just sayin’. Enjoy! 🙂

    1. Thanks, McKenna! I totally feel ya’, it is hot and humid here in Orlando. Basically feels like a sauna every time I walk outside! This would be a great lunch option – just be sure you get your protein by adding yogurt or protein powder. Enjoy!

  6. Alright, you got me with the picture. That looks so tasty! And then I got to the ingredients and the desire to have this green smoothie waned….A LOT. I think you should bring me a green smoothie to work one day and not tell me what’s in it. Chances are I’d probably like it!!

  7. Mmmmm this looks sooo yummy and refreshing! Any subs to greek yogurt for those that are dairy intolerant? Maybe I’ll just eliminate all together – I assume it will just make a less thick version of this…? Love your blog!! Can’t wait to follow you more 🙂

    1. Hi Chrissa! Yes, you could totally sub yogurt made from coconut milk or soy milk! Or, add a scoop of your favorite vanilla protein powder or some silken tofu- the consistency shouldn’t be affected too much. Thank you for the sweet compliments!   9. Where do you get your mint? I remember as a kid we had wild mint, we now live in a condo, no backyard, and I never see mint available fresh in grocery stores.

    1. Rebecka – Where do you live? I grow mint in a pot outside, but I can also find it in just about any grocery store here in Florida! This smoothie would still be delicious without it if you can’t find any!
