They are filled with nutrients that will help keep you full for longer, sustain energy and even satisfy your sweet tooth! Get the recipe below.
Sometimes, when life gets busy, you just have to raise the white flag. Can you relate?
You may have noticed that these past few weeks I haven’t been posting as frequently or been as engaged with my online community as I may have liked to. Really what I’m trying to say is, I miss you guys!
Just when I thought I had everything under control and and a schedule for my “new normal” figured out, wham bam bam, it got pulled out from under me – just like that. With an increasing responsibility as manager and creative director of food at the local juice bar I work at, paired with getting ready to open said juice bar, my time I thought I had was quickly deminishing.
Needless to say, these past few weeks have been a blur and I’m sitting here raising my white flag.

Now, don’t get me wrong, I love that I now have a creative outlet to be able to put my passion for cooking and nutrition to use and am proud to have partnered with New Moon Juice Bar to help create their food menu and become a more integral part of their team. It’s been a dream come true!
But with the extra time I’ve been spending in the <commercial> kitchen, the less time I’ve had for other things (ahem, this blog). Instead of trying to do it all, I knew something had to give.
That seems to happen a lot in life doesn’t it? You finally find your groove and then something happens to where you’re forced to reassess, reprioritize and realign your commitments and responsibilities.
Instead of getting my panties in a wad, I am choosing to look at these times as “growing pains.” They are simply moments in life that force us to adapt, lean on others for support and grow in our own confidence as we tackle life the best way we know how.
You are probably wondering what this little life lesson has to do with energy bites, huh? You see, in times like these, I find that what I choose to fuel my body with is crucial in sustaining my energy, balancing my mood and providing me with mental clarity.
Luckily for me, that place where I am spending most of my time lately is also stocked with nutrient dense food that helps me fuel my body properly!
These almond apricot energy bites are a customer favorite at the juice bar and is a recipe I’ve had in my back pocket for a while. They are inspired by one of my favorite KIND bar flavors and are full of energy boosting nutrients such as: healthy fats and minerals (specifically, manganese, copper and riboflavin) found in the almonds, as well as fiber and potassium found in the dried apricots!

Whenever I’m hitting that midday slump and am in need of a boost, I’ll reach for a few of these almond apricot energy bites to keep me going the rest of the day. Hence, the AA name, except instead of battery juice, we’ve got nutrient juice! They are quite filling and even help keep sugar cravings at bay with the touch of sweetness from the honey.
Feeling impatient in the kitchen? These bites can also be made into bars by simply pressing the almond apricot mixture into the bottom of a square baking pan that has been lined with parchment paper. Just make sure you chill them in the refrigerator or freezer to let them firm up before cutting into them.
Next time you’re feeling your energy tank run low, whip up some of these Almond Apricot Energy Bites or better yet, make them ahead of time to have on hand throughout the week!Print
- 1 c. roasted lightly, or unsalted, whole almonds
- 1/2 c. coconut flakes, unsweetened
- 1/2 c. oats
- 1 c. chopped apricots
- 1/3 c. honey
- 1/4 c. coconut oil, melted
- 1 tsp. vanilla
- Add almonds to a food processor and pulse in high until coarsely ground.
- Add all other ingredients to the almonds and pulse on high until well combined and of a smooth, or slightly chunky consistency.
- Scoop mixture out with a mini ice cream scooper or a Tablespoon measuring spoon and form into a ball with your hands. Roll in extra shredded coconut. Place on a lined baking sheet.
- Place the baking sheet in the refrigerator until the bites are hardened or until ready to serve.
These bites can be stored in the refrigerator for up to a week, or in the freezer for 3 months!
