Healthy Homemade Crunchy Granola

Ingredients

  • 1 cup old-fashioned oats
  • 1 cup unsweetened coconut chips
  • 1 cup sliced almonds
  • ½ cup raw quinoa 
  • ½ cup raw pumpkin seeds
  • ¼ cup coconut oil, melted
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon 
  • Pinch of salt

Instructions

  1. Preheat the oven to 300F. 
  2. In a large mixing bowl, combine the dry ingredients and mix with a spoon. In a separate bowl, mix the coconut oil, maple syrup and vanilla extract, then pour over the dry ingredients. Stir until evenly coated. 
  3. Spread the granola mixture onto a parchment lined baking sheet in an even, thin layer. The more spread out the granola is, the crunchier it will be. Bake for 30 minutes, stirring halfway through. Allow to completely cool before transferring to an airtight container. Store in the refrigerator for up to a few weeks.
