


These Carrot Cake Energy Bites are perfect when you want a healthy treat that can be eaten as a snack (as early as breakfast!) and to satisfy those sweet cravings.
Sugar seems to be at the top of everyone’s “I know I should cut it out, but it tastes so good I can’t” list. I was just talking to someone the other day about this and how I’ve noticed that my body processes various sugars differently, therefore, affecting my cravings.
When I was indulging in ice cream, pastries, cookies (you name it) on a regular basis, that was all I ever wanted. My mouth started salivating the minute I got a glimpse of a sweet treat. Sound familiar?
After cutting out processed sugars and sweets for a period of time, while introducing foods made with more natural sugars, I noticed a HUGE difference. I began craving those healthier treats and could more easily resist the unhealthier ones. Now, I do still indulge from time to time but it’s much easier to stay on track with an arsenal of healthier treats on hand.
When I take the time to plan ahead, I like to have a few sweet treats on hand to satisfy cravings at a moment’s notice. Usually these treats are sweetened with dates, a little bit of maple syrup, honey or even fresh fruit and are either some form of pudding or energy bite.
Carrot Cake Energy Bites
Ever since having a slice of carrot cake at Easter lunch, I can’t get it out of my mind. When this happens, I usually like to figure out how I can have it again, but in a much healthier way. And so, to the energy bite drawing board it was!
These bites are loaded with nutritious goodness. The sweetness from the dates are balanced with fiber, healthy fats and protein (from the cashews) which will not only satisfy your sweet tooth, but give you a boost in energy when you need it.
Don’t worry, I didn’t skimp on any of the traditional flavors of carrot cake – the gang is all here! These carrot cake energy bites are made of cashews (to mimic the creaminess of the frosting), freshly grated carrots, dates, walnuts, raisins and coconut flakes.
I wanted to keep these bites at seven ingredients or less, but if you’re feeling a little fancy, you could make a delicious cashew cream frosting to drizzle on top (like, whoa!).

Description
These Carrot Cake Energy Bites are perfect when you want a healthy treat that can be eaten as a snack (as early as breakfast!) and to satisfy those sweet cravings.
Ingredients
- 1 cup carrots, grated (about 2 medium carrots)
- 1 cup Medjool dates , pits removed(about 10)
- 1/2 cup cashews
- 1/2 cup walnuts
- 1/2 cup raisins
- 1/2 cup unsweetened coconut flakes, plus more for coating
- 1 teaspoon cinnamon
Instructions
- Add all of the ingredients to a food processor and pulse on HIGH until crumbly and the dates and nuts are finely chopped.
- Using a melon baller or spoon, form the mixture into balls about 1′ in diameter. This should make about 20 bites. Roll in extra coconut flakes.
- Store in the refrigerator for up to a week or in the freezer for a few months!
