Description
This Autumn-inspired fig balsamic power bowl is satisfying, flavorful and highlights the delicious flavors of the Fall season. You can’t go wrong with seasonal ingredients such as figs, pears and Brussels sprouts in this delicious and nutritious power bowl.
Ingredients
- 1 Tablespoon avocado oil
- 1 ½ cups brussel sprouts, cut in half
- 2 cups garbanzo beans, rinsed and drained
- 1 lemon, quartered
- 1 pear, thinly sliced
- 4 figs, quartered
- ½ avocado, thinly sliced
- ¼ cup walnuts
- 4 cups baby kale (or preferred leafy green)
For the fig balsamic dressing:
- ¼ cup balsamic vinegar
- ¼ cup avocado oil
- 2 fresh figs (or substitute 2 dried figs)
- 1 Tablespoon raw honey, optional for added sweetness
- ¼ teaspoon salt
- Pinch of black pepper
Instructions
- Preheat the oven to 425 degrees.
- Pat the chickpeas dry and spread onto a parchment-lined baking sheet. Add the brussel sprouts and drizzle with avocado oil and sprinkle of salt. Lightly toss to coat. Place lemon quarters on the baking sheet. Roast for about 30 minutes, until golden brown and crispy.
- To make the dressing, add all of the ingredients to a blender and blend until smooth. Set aside.
- To assemble the power bowls, divide the leafy greens between two bowls. Drizzle 2 Tablespoons of dressing, then top with the roasted brussel sprouts, chickpeas, pear, figs, avocado and walnuts. Squeeze the roasted lemon juice on top. Enjoy!
