This Autumn-inspired fig balsamic power bowl is satisfying, flavorful and highlights the delicious flavors of the Fall season. You can’t go wrong with seasonal ingredients such as figs, pears and Brussels sprouts in this delicious and nutritious power bowl.

In Los Angeles, figs were of no short supply at the local farmer’s markets. However, in Florida I find there’s a short window of time that figs are offered at the grocery store.

If you can’t find fresh figs to make this super simple and delicious fig balsamic dressing, you can swap for dried figs.

The beauty of power bowls is that they can be customized with various flavors and seasonal ingredients. Ingredients can be prepped ahead of time (like roasting vegetables and making the dressing) so that all you have to do is assemble throughout the week!

For this autumn-inspired fig balsamic power bowl, I chose roasted brussel sprouts, pears and fresh figs for the seasonal highlight, but feel free to swap for anything you like.

With any power bowl (or balanced plate), you want to include protein, healthy fats and fiber. This is what I call #theperfecttrifecta to balance blood sugar levels, keep cravings in check and energy levels up!

In this autumn-inspired fig balsamic power bowl, you’re getting:

  • Protein through roasted chickpeas (you could also sprinkle on some hemp seeds. Three tablespoons provides 10g of protein!), or you could swap for grilled chicken or wild salmon
  • Healthy fats through the avocado oil, walnuts and avocado
  • Fiber through the leafy greens, roasted veggies, fruits and avocado

Want to take your power bowl on-the-go?

Turn it into a mason jar salad! To do this, add the fig balsamic dressing to the bottom of the jar, then layer (from bottom to top): pear, brussel sprouts, chickpeas, walnuts, fig and lettuce. I would recommend saving your avocado until you’re ready to eat so that it doesn’t brown while waiting.
