A homemade brunch can be easier on the wallet and will minimize the brunch hangover with the option for preparing healthier items. If there’s one thing that’s a must on your spread, it’s pancakes. I’ve got 25 healthy pancake recipes for you to choose from below. 

Breakfast is easily my favorite meal of the day. Especially when it’s done right. There’s got to be a little something sweet to balance out the savory.

Whenever I’m dining out for breakfast, I usually opt for a veggie omelette with a pancake on the side to share.

Some of my favorite flavors include carrot cake pancakes, lemon ricotta pancakes and good ol’ blueberry pancakes. Honestly though, if carrot cake is an option, there aren’t any other flavors that can compete. 

Pancakes are one of those breakfast foods that brings families together in the morning. To me, it means a slower breakfast at home. One that everyone eagerly awaits as the patience of cooking and flipping the pancakes almost becomes unbearable. 

My memories of pancakes goes all the way back to my Nana making her famous buttermilk pancakes every time we would visit. Pancakes were the food that my friends and I would whip up late at night when we wanted a snack.

They were the only recipe that my brother knew how to cook for the longest time. Pancakes were one of the first foods I tried to make “healthy”, thanks to buckwheat flour

Pancakes are so much more than a round cake-like thing on a plate. Each bite feels like comfort, nostalgia for something so familiar. 

For your next brunch at home, I’ve rounded up 25 healthy pancake recipes to inspire the spread of your dreams. 

If the recipe doesn’t have the following healthy swaps, remember:

  • To make a pancake vegan, you can substitute 1 egg for 1 flax egg (1 tablespoon ground flaxseed + 2.5 tablespoons water). They might not be as fluffy, but this substitute will act as a comparable binder. 
  • Instead of vegetable oil or butter, swap it for coconut oil which is full of MCTs (medium-chain triglycerides) which has been shown to improve overall health in moderation. 
  • To make a pancake gluten-free, instead of using gluten-free all-purpose flour, try making it more nutritious with a combination of almond flour and oat flour. A good place to start is ½ almond flour and ½ oat flour to replace the equivalent of all-purpose flour. 
  • Instead of cane sugar, opt for coconut sugar for a low-glycemic alternative
